De dressing zit vol Aziatische smaakmakers en maakt er een lichte, maar verrassend vullende maaltijd van. Ideaal voor een warme dag of als lunch.<\/p>\n<h4 data-start=\"1140\" data-end=\"1161\">Bereiding:<\/h4>\n<ol data-start=\"1162\" data-end=\"1811\">\n<li data-start=\"1162\" data-end=\"1384\">\n<p data-start=\"1165\" data-end=\"1384\"><strong data-start=\"1165\" data-end=\"1186\">Maak de dressing:<\/strong> verwarm rijstazijn met suiker en zout in een pannetje tot de suiker is opgelost. Haal van het vuur en voeg knoflook en chili toe. Laat afkoelen, roer daarna de sesamolie, limoensap en -rasp erdoor.<\/p>\n<\/li>\n<li data-start=\"1385\" data-end=\"1487\">\n<p data-start=\"1388\" data-end=\"1487\"><strong data-start=\"1388\" data-end=\"1407\">Kook de noedels<\/strong> volgens de verpakking (meestal 5\u20137 minuten). Giet af en spoel onder koud water.<\/p>\n<\/li>\n<li data-start=\"1488\" data-end=\"1631\">\n<p data-start=\"1491\" data-end=\"1631\"><strong data-start=\"1491\" data-end=\"1511\">Bak de aubergine<\/strong> in ruim olie tot de blokjes goudbruin zijn. Voeg eventueel extra olie toe als ze droog bakken. Bestrooi licht met zout.<\/p>\n<\/li>\n<li data-start=\"1632\" data-end=\"1665\">\n<p data-start=\"1635\" data-end=\"1665\"><strong data-start=\"1635\" data-end=\"1664\">Snijd de mango en rode ui<\/strong>.<\/p>\n<\/li>\n<li data-start=\"1666\" data-end=\"1811\">\n<p data-start=\"1669\" data-end=\"1811\">Meng in een grote schaal de sobanoedels met de aubergine, mango, ui en dressing. Hussel goed door en garneer met verse koriander en basilicum.<\/p>\n<\/li>\n<\/ol>\n<p data-start=\"1813\" data-end=\"1897\">Lekker lauwwarm of koud te eten.
